Understanding the Cold Chain – Considerations & Best Practices for Food Banks

The cold chain is a term applied to food handling and distribution where products are maintained at suitable temperature conditions all the way from harvesting, through the cooling or freezing process to the point of sale. Maintaining the cold chain of perishable food products is critical to ensuring product safety and quality.

With food banks sourcing products from across the supply chain, it is vital to plan for cost-effective resources that are necessary to maintain the cold chain – systems, equipment, vehicles, storage facilities and more.

This session will provide a comprehensive picture of the cold chain, focusing on topics such as determining when it is time to invest in cold chain infrastructure and evaluating cold chain options. Through a partnership with the Global Cold Chain Alliance (GCCA) you will learn about resources, training, and events accessible to boost your knowledge and connections across the cold chain.

Holly Coughlan has worked with GCCA since September 2022. She orchestrates day-to-day membership operations at the association, onboarding incoming organizations and facilitating their access to GCCA’s extensive array of resources. Holly has a non-profit background, having worked at DMV-based Liberty’s Promise, where she taught and managed programming for two public high-school civics programs. Holly is dedicated to delivering outstanding member support to ensure nothing gets in the way of the mission to make sure food reaches all tables.

Francisco Moura, Chief Executive Officer, IceStar, São Paulo, Brazil

IceStar is a cold storage logistics company based in Santiago, Chile. Mr. Moura is a member of the Board of Directors for the Global Cold Chain Alliance (GCCA) and Chile Alimentos’. Previously, Mr. Moura was the CEO of SuperFrio and Comfrio, and the Board President of ABIAF (Brazilian Association of Cold Storage Industry). Mr. Moura is also the author of the book, History of Brazilian Cold Chain Logistics and changes in food production, trading and consumption – a cornerstone in the literature about cold chain logistics.
